Anyone know of a good food testing lab that would be bake to test a loaf of my gluten free bread to determine how much if any gluten is in the bread? Also curious how much residual sugar there might be. Cost is definitely a factor.

Dan. @dan The Lab we have done some testing for the type of analysis you are describing is Medallion Labs. they have all of those type of analysis. I know the gluten content (in ppm) testing is costly. Or at least, it used to be.
