My current version of 100% whole wheat vegan waffles is:
2 cps finely milled Patwin
4 cups sourdough starter discard
1 tsp baking powder
3 T sugar
1 vegan egg (1 T flax seed mixed with 3 T warmed almond milk)
~ 2 cps almond milk – more or less depending on the consistency you want
I tend to mix in things, like chocolate chips, pecans, dried fruit.
I set my waffle iron to 6, the highest setting and spoon about scant cup worth
